Peanut sauce makes broccoli taste decadent. Peanuts on top add crunch. Serve over white rice and this feels like a meal from a Chinese takeout place!

Ingredients
- 1/3 cup creamy natural peanut butter
- 1/2 cup water, divided
- 2 tbsp brown sugar
- 1 tbsp rice vinegar
- 2 tbsp reduced sodium soy sauce
- 2 tbsp canola oil
- 1 1/2 pounds broccoli crowns
- 2 cloves garlic
- some peanuts to sprinkle on top
- for spice, add crushed red pepper
Steps
- Mix peanut butter with 1/4 cup water, 1 tbsp soy sauce, 1 tbsp vinegar, brown sugar (set aside peanut sauce)
- In a large sauce pan, heat canola oil and cook broccoli until desired softness
- Add garlic, remaining 1/4 cup water and remaining 1 tbsp soy sauce
- Add peanut sauce and cook over very low heat for a few more minutes, until sauce thickens a little
- Sprinkle with peanuts (peanuts are a choking hazard and should be crushed for small children)
Serve over white rice.
- Add crushed red pepper for grownups who like a little heat
