Peanut and Broccoli Stir Fry

Peanut sauce makes broccoli taste decadent. Peanuts on top add crunch.  Serve over white rice and this feels like a meal from a Chinese takeout place!

Ingredients

  • 1/3 cup creamy natural peanut butter
  • 1/2 cup water, divided
  • 2 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 2 tbsp reduced sodium soy sauce
  • 2 tbsp canola oil
  • 1 1/2 pounds broccoli crowns
  • 2 cloves garlic
  • some peanuts to sprinkle on top
  • for spice, add crushed red pepper

Steps

  • Mix peanut butter with 1/4 cup water, 1 tbsp soy sauce, 1 tbsp vinegar, brown sugar (set aside peanut sauce)
  • In a large sauce pan, heat canola oil and cook broccoli until desired softness
  • Add garlic, remaining 1/4 cup water and remaining 1 tbsp soy sauce
  • Add peanut sauce and cook over very low heat for a few more minutes, until sauce thickens a little
  • Sprinkle with peanuts (peanuts are a choking hazard and should be crushed for small children)

Serve over white rice.

  • Add crushed red pepper for grownups who like a little heat
